Glowing Skin Acai Bowl

Most people who know me know that I’m obsessed with acai bowls. I could be totally content with eating them for every meal. Of course I had to figure out how to make them at home for those days when I don’t feel like going out to the local coffee shop and spending $9.42 on one.

Acai bowls are super trendy these days, but for good reason. They can be packed with all the vitamins and supplement powders of a smoothie, and then topped with yummy fruits and crunch like a yogurt. The reason I call this a "Glowing Skin" acai bowl is because I pack mine with a couple different nutrients specifically targeting my skin, like collagen (for elasticity and moisture) and inosital (for regulating hormones which improves my acne). However, many of the ingredients included are already so good for your skin before adding in powders and supplements.

I'm pretty picky when it comes to consistency and flavor, so it took some trial and error to get the right amounts of each ingredient. This recipe is my final edit, and a great base for all kinds of acai bowls! In the end, it's really up to you what you do or don't want as a topping. That's what makes acai bowls so fun. Oh the possibilities!

Let's begin, shall we?

Servings: 2 hungry adults

Ingredients:

(Base)

  • 1 banana

  • 1 cup unsweetened coconut cream (If you like peanut/almond/cashew butter you can use that in place of this)

  • 2 1/2 cups frozen mixed berries (raspberries, blackberries & blueberries are best)

  • 1 tsp açaí powder

  • 1/4 cup oats

  • Any additional supplements you'd like (collagen, protein, fiber, herbal supplements, etc.)

(Topping options, choose as many or as few as you'd like)

  • Strawberries

  • Blueberries

  • Banana

  • Mango

  • Shredded Coconut

  • Flax/Chia seeds or meal

  • Granola

  • Chocolate chips

  • Whipped Cream

  • Agave Nectar

  • Maple Syrup

  • Honey

  • Cinnamon

  • Peanut Butter drizzle

  • Endless options, really.

Directions: 

In a Vitamix or blender of some sort, mix together all the base ingredients until smooth. Pour the base into two bowls and top with a good balance of sliced fruit, granola, coconut, seeds, and maybe even some chocolate chips or honey! Take a picture of it's beauty and tag me so I can drool over it. I can't wait to see your creations!
